ELABORATION:
Harvest is done vine by vine when the grapes are healthy, balanced and ripened.
Once they have been treshed, grapes are fermented and macerated according to each variety.
Daily pumpings (often changing from ‘rinsings‘ to ‘delestages').
The maceration process takes between 6 to 10 days to eventually proceed to the pressing.
Once the malolactic process is finished, the wine ripens in barrels until its bottling.
Consumption temperature : It is advisable to savour it between 15 ° and 18 ° .
TASTING NOTES:
Intense garnet color with purple hues. Intense aromas of ripe berries (blackberries, raspberries, currants), with particularly soft spicy notes. Palate complex, comprehensive and unctuous with velvety tannins, reconvened the ripe fruit. Good persistence.
PRODUCTION AREA:
The vines are gathered under the seal of quality ‘Denominació d'Origen Empordà'.
They are located on the highest part of the Ampurdan plain, on the range foot, creeping up the hills and spurs of Serra de la Baga de Ferran and the near Serra de l'Albera.
